Sautéed Zucchini Patties

Ingredients

5 medium zucchini
3 eggs
1 tablespoon grated cheese
1 tablespoon grated onion
2 tablespoons flour
1/2 cup chopped parsley
1 teaspoon salt
1 teaspoon pepper
1/2 cup oil

Directions:

Clean and remove ends, but leave zucchini unpeeled. Shred coarsely. Sprinkle with salt. Let stand 1 hour; drain, pressing out all possible liquid. Mix zucchini with unbeaten eggs, cheese, onion, flour, parsley, salt and pepper. Shape into patties and sauté in small amount of heated oil. Add more oil as needed. If frozen, reheat in oven before serving.
