Festive Green Beans

Ingredients

1 pound fresh green beans, trimmed
8 scallion with long green stems
1 red bell pepper, cut into 1/4-inch strips
1 clove garlic, minced
4 tablespoons margarine
1/2 teaspoon fresh thyme
1/4 teaspoon salt
1/4 teaspoon white pepper

Directions:

Cook beans in salted water to cover for 3 minutes. Plunge into ice water to stop cooking process. Drain. Cook scallions in boiling water for 15 seconds. Pat dry and cut off the white onion bulb. Set aside. Divide beans into 8 portions. Make bundles by tying a scallion stem around each bundle, placing several red pepper strips under each knot. Place the bundles in greased 8x8-inch casserole.

Slice onion bulbs and sauté with garlic for 3 minutes in margarine. Add thyme, salt, and pepper. Pour over beans. Bake in 375° oven until heated through.

Note:
Can be prepared one day ahead before baking. Cover and refrigerate. Bring to room temperature and bake as directed.
