Harvest Dinner Onion Pie

Ingredients

1 cup finely crushed saltine crackers
1/4 cup melted butter
2 cups thinly sliced onions
2 tablespoons butter
3/4 cup milk
2 eggs, slightly beaten
salt and pepper
1/4 cup shredded sharp cheese
paprika

Directions:

Press crackers and melted butter into bottom of 9-inch pan. Sauté onion in butter until tender. Add to crackers. Pour milk and egg mixture over all. Add salt and pepper. Top with cheese and sprinkle with paprika. Bake at 350° for 25–30 minutes till brown and bubbly. Doubling recipe will make 9x13-inch oblong pan.
