Clover-Leaf Rolls

Ingredients

3/4 cup scalded milk
1/4 cup sugar
3 tablespoons shortening
1 1/2 teaspoons salt
1 cake compressed yeast
1/4 cup lukewarm water
1 egg, beaten
3 1/2 cups all-purpose flour

Directions:

Pour scalded milk over sugar, shortening, and salt. Soften yeast in lukewarm water. Add egg. Add yeast mixture to milk that has cooled to lukewarm temperature. Add flour gradually, mixing well after each addition. Knead lightly for several minutes. Place in greased bowl, cover and let rise in warm place until double in bulk. Pinch off pieces of dough the size of a marble, roll into round balls, and place 3 balls in greased muffin tins. Let rise until double in bulk. Bake at 425° for 20 minutes.
