Apricot Ginger Chutney

Ingredients

2 cups dried apricots
1 1/2 tablespoons chopped candied ginger
1 cup dark raisins
1/2 lime, thinly sliced
1 large onion, thinly sliced
1 1/2 cups packed dark brown sugar
1/2 - 1 cup orange juice
1/2 cup wine vinegar
3 cloves garlic, minced
1 teaspoon dry mustard
1/2 cup tomato sauce
1/2 teaspoon cinnamon
1/2 teaspoon allspice
1/2 teaspoon cloves

Directions:

Wash and chop apricots. Combine all ingredients in a medium saucepan and simmer 20 minutes, stirring often until slightly thickened. Pour cool chutney into a covered container and refrigerate. May be served cold or at room temperature.
