Sunday Night Fireside Soup

1 pound sausage meat
4 cups water
2 (15 1/4-ounce) cans red kidney beans, drained
1 (1-pound 13-ounce) can tomato
1 onion, chopped
1 large bay leaf
1/2 clove garlic, minced
2 teaspoons salt
1/8 teaspoon black pepper
1/2 teaspoon thyme
1/8 teaspoon caraway seed
a pinch of crushed red pepper
1 cup peeled and diced raw potato
1 small green bell pepper, with seeds removed, chopped


Brown sausage meat in a skillet. Drain the sausage and crumble it. In a kettle, combine the sausage meat with the water, red kidney beans, tomatoes, onion, bay leaf, garlic, salt, black pepper, thyme, caraway seed, and red pepper. Simmer the mixture for 1 hour. Add the potatoes and green pepper. Simmer, covered, for another 20 minutes. Adjust seasonings and serve.
