Blue Corn Dumplings

Ingredients

1 cup blue corn flour
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon bacon drippings, lard or other shortening
1/3 - 1/2 cup milk

Directions:

Mix (or sift) dry ingredients thoroughly in a mixing bowl. Cut in shortening and add enough milk to make a drop batter. Drop by spoonfuls on top of simmering stew. Cover kettle and steam dumplings for 15 minutes. Stew should be kept bubbling.


Fun Fact: The ground meal made from blue corn is nuttier in flavor, higher in protein, and lower in starch than the meal made from either white or yellow corn, and it produces a more fragile tortilla. The color of the kernel and the meal is gray-blue. If the kernel is popped, the popped corn is white.
