Peach Tree Chilled Avocado Soup

Ingredients

4 medium ripe avocados, peeled ant pitted
1 garlic clove, minced
4 green onions, chopped
5 tablespoons chopped fresh cilantro
1 tablespoon sliced pickled jalapeño pepper with juice
1/2 teaspoon Tabasco
3 cups sour cream
1 cup buttermilk
8 cups chilled Swanson's chicken broth
salt to taste
garnish: sour cream and finely minced green onions (green part only)

Directions:

In a blender or food processor, combine avocados, garlic, green onions, cilantro, jalapeños with juice, and Tabasco. Process until smooth. Add sour cream and process again. Stir in buttermilk and chilled chicken broth. Taste for salt. Cover and refrigerate until very cold. Garnish with a dollop of sour cream and chopped green onions, green part only.
