Fry tortilla strips in hot oil until crisp. Boil chicken breasts, quartered onion, and garlic in water to cover for 20 minutes. Drain and dice the chicken breasts. Sauté tomatoes, serrano, and 1/2 onion in 3 tablespoons vegetable oil. Add tortilla strips and chicken. Add eggs and scramble.
Variation: Bake tortillas with Pam, use only 1 teaspoon vegetable oil to sauté vegetables, and substitute Egg Beaters.
