Ingredients

Ribs:
1/2 cup firmly packed brown sugar
1/4 cup country-style Dijon style mustard
3 cups apple juice
1 teaspoon hot pepper sauce
3 pounds beef, pork loin, or country-style ribs
------------------------------
Barbecue Sauce:
1/4 cup firmly packed brown sugar
1/4 cup chopped onion
1 cup ketchup
1/2 cup Worcestershire sauce
1/4 cup lemon juice
1/2 teaspoon coarsely ground pepper
1/4 teaspoon salt
1/4 teaspoon cayenne pepper

Directions:

Ribs:
In Dutch oven, stir together all ingredients, except ribs; add ribs. Cook over high heat until mixture comes to a full boil. Cover; reduce heat to low. Continue cooking, turning ribs occasionally, until ribs are fork-tender, 40–50 minutes. Prepare grill.

Barbecue Sauce:
In 1-quart saucepan stir together all Barbecue Sauce ingredients. Place ribs on grill. Brush ribs with Barbecue Sauce. Grill, brushing with Sauce and turning occasionally, until ribs are done, 12–15 minutes. Cook remaining Barbecue Sauce over medium heat, stirring occasionally, until it just comes to a boil. Serve with ribs.

Fun Fact: More pronghorn can be found in Wyoming than anywhere else in the world. As a matter of fact, with 416,000 pronghorn, Wyoming has 70% of the world’s population. Often called “antelope,” the pronghorn is actually a relative of the African gazelle. Capable of reaching speeds up to 70 miles per hour, the pronghorn is North America’s fastest land animal.
