Glacier Breakfast Bake

Ingredients

2 cups fully cooked diced ham
1 (12-ounce) package frozen hashbrown potatoes
1/2 cup sliced fresh mushrooms
1 cup chopped green bell pepper
1 tablespoon instant minced onion
2 cups shredded Cheddar cheese, divided
3 cups milk
1 cup baking mix (Bisquick)
1/2 teaspoon salt
4 eggs

Directions:

Grease a 9x13-inch pan. Mix ham, potatoes, mushrooms, green peppers, onion, and 1 cup cheese. Spread in pan. Stir milk, baking mix, salt, and eggs together until blended. Pour over potato mixture. Sprinkle with remaining 1 cup cheese. Cover and refrigerate for at least 4 hours, but no longer than 24 hours. Preheat oven to 375°. Bake uncovered for 30–35 minutes. Let stand for 10 minutes before serving.
