Fresh Vegetable Medley with Parmesan-Lemon Sauce

Ingredients

Vegetable Medley:
1 (1-pound) head cauliflower (about 1 1/2 cups), cut into 1-inch pieces
1 pound fresh broccoli (about 2 cups), cut into 1-inch flowerets
1 large carrot, cleaned and cut into sticks
1 small zucchini and/or small yellow squash, peeled and thinly sliced

Parmesan-Lemon Sauce:
1/2 stick (1/4 cup) reduced-calorie margarine, melted
2 teaspoons lemon juice
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1 teaspoon dried basil
1/4 cup grated Parmesan cheese

Directions:

Vegetable Medley:
Using a 10-inch glass pie plate or microwave-safe serving dish, arrange cauliflower around the outer edge. Arrange broccoli inside the cauliflower ring, with the stems pointing toward outer edge of plate. Place carrot sticks between broccoli stems. Pile zucchini slices in the center.

Parmesan-Lemon Sauce:
Mix ingredients except for the grated cheese in a small bowl. Pour over vegetables. Sprinkle with Parmesan cheese. Cover loosely with plastic wrap. Microwave for 8–10 minutes at HIGH (100%). Let stand 3 minutes.
