"Fresh off the Cob" Corn

Ingredients

1 stick butter
3 (1-pound) bags frozen corn, thawed, divided
2 cups half and half
1 1/2 teaspoons salt
1 1/2 teaspoons pepper

Directions:

Melt butter in a heavy skillet. Pour 1 bag corn into a blender with half-and-half. Purée and pour into skillet with remaining 2 bags corn. Add salt and pepper. Stir constantly and bring to a boil. Reduce heat to medium low and cook covered, stirring frequently, for 15–20 minutes. Uncover and cook an additional 15–20 minutes, still stirring frequently.
