Tex-Mex Sloppy Joes

Ingredients

1 1/2 pounds ground beef
1 cup onion, chopped
1 clove garlic, minced
3/4 cup spicy cocktail vegetable juice
3/4 cup catsup
1/2 cup water
2 tablespoons brown sugar, packed
2 tablespoons jalapeño peppers, chopped
1 tablespoon mustard
2 teaspoons chili powder
8 kaiser rolls, split and toasted
1 Garnish: Mexican-blend shredded cheese, sliced avocado, sliced jalapeño peppers, sliced black olives

Directions:

In a skillet over medium heat, brown ground beef, onion and garlic; drain. Combine juice, catsup, water, brown sugar, peppers, mustard and chili powder in a slow cooker; stir in meat mixture. Cover and cook on low setting for 8 to 10 hours. Spoon meat mixture onto buns; garnish as desired.
