French Onion Soup

Ingredients

1 tablespoon butter
2 tablespoons olive oil
4 onions, sliced
3 cups beef broth
3 bay leaves
1 salt and pepper to taste
6 slices French bread, toasted
3/4 cup shredded Swiss cheese

Directions:

Heat butter and oil in a stockpot over medium heat until butter melts. Add onions; cook for 20 to 30 minutes, until dark golden. Add broth, bay leaves, salt and pepper. Bring to a boil; reduce heat, cover and simmer for 30 minutes. Discard bay leaves. Ladle soup into 6 oven-safe soup bowls; top each with a slice of bread and sprinkle with cheese. Set bowls on a sturdy baking sheet. Broil until cheese is melted and golden.
