White Cheddar Mac and Cheese

Here's a recipe for white cheddar mac and cheese that's better than any box. The secret: Add a dash each of garlic powder and chipotle powder for a savory kick.

Ingredients:
1 package (16 ounces) small pasta shells
1/2 cup butter, cubed
1/2 cup all-purpose flour
1/2 teaspoon onion powder
1/2 teaspoon ground chipotle pepper
1/2 teaspoon pepper
1/4 teaspoon salt
4 cups 2% milk
2 cups shredded sharp white Cheddar cheese
2 cups shredded Manchego or additional white Cheddar cheese

Directions:
Bring the water to a boil in a 6-quart stockpot and cook the pasta according to the package directions. Drain the noodles and return them to the pot.

Meanwhile, melt the butter in a large saucepan over medium heat. Whisk in flour, onion powder, chipotle powder, salt and pepper until smooth. Then whisk in the milk. Bring the sauce to a boil, stirring constantly. Cook and stir until thickened, six to eight minutes. Remove from the heat and stir in the cheddar and Manchego. When the cheese is melted, add the pasta and toss to coat.
