Pizza Tater Tot Casserole

Pizza Tater Tot casserole is a mashup of two comfort foods: meat and veggie pizza and an ooey-gooey hot dish topped with crispy, golden potatoes.

Ingredients:
1 1/2 pounds ground beef
1 medium green pepper, chopped, optional
1 medium onion, chopped
1/2 pound sliced fresh mushrooms
1 can (15 ounces) pizza sauce
1 teaspoon dried basil
3 cups shredded part-skim mozzarella cheese
1 package (32 ounces) frozen tater tots
1 cup shredded Cheddar cheese

Directions:
Preheat the oven to 400°F. In a large skillet, cook the ground beef with chopped green pepper, onion and mushrooms over medium heat until the meat is no longer pink, breaking it into crumbles. Drain and discard excess grease and liquid from the vegetables.

Stir the pizza sauce and dried basil into the beef mixture. Transfer to a greased 3-quart or 13x9-inch baking dish and spread it into an even layer. Spread the mozzarella cheese, then arrange the Tater Tots on top. Editor’s Tip: Cut down on dishes by cooking the beef and veggies in an oven-safe skillet, then layering and baking the casserole in the same pan.

Bake the pizza Tater Tot casserole, uncovered, until the potatoes are lightly browned, 30 to 35 minutes. Carefully remove the dish from the oven, sprinkle it with cheddar cheese, and bake until the cheese is melted, about five minutes longer.
