Why I’m Never Waiting 30 Years for This Meal Again
Two years ago, I stopped by to visit my mom.
While I was there, she said those old familiar words that I love to hear:
“Are you hungry?”
Now, I didn’t want to offend her (wink), so I said,
“I mean… sure! I could eat!”
She smiled and said,
“I made corned beef yesterday. I have some leftovers if you'd like.”
Friends.
That flavorful meat.
Those long, sweet carrots.
That tender boiled cabbage.
Oh. My. Word.
I don’t think I had eaten corned beef like that in 30 years.
It was one of those meals that makes you stop mid-bite and think,
Where has this been all my life?
Part of it was nostalgia.
But part of it was something else.
You just can’t get a meal like that anywhere.
If you wanted a fresh, homemade corned beef dinner like that… where would you even go?
That’s when I decided:
I am not waiting another 30 years for this meal.
Mom gave me the recipe. Naturally, I put it into Cook’n on my phone and even recorded a voice memo reminding myself to buy corned beef at the store.
Because… priorities.
The Seasonal Plot Twist
Well, three months later, I finally made it to the store.
Carrots? Check.
Cabbage? Check.
Corned beef?
Nowhere.
I called Mom.
She laughed and said, “It’s seasonal. They only carry it around St. Patrick’s Day.”
I said, “You’ve got to be kidding me.”
She said, “Next March, buy extra and freeze them. Then you can have it anytime.”
Genius.
So I recorded another reminder.
Next St. Patrick’s Day, I bought three.
I cooked one and froze two.
Kathy’s Review
The first time I cooked it, Kathy walked into the kitchen and said:
“What. Are. You. Doing?”
“I thought I’d make corned beef for dinner!”
She made a face.
“Oh… gag. I can’t stand the smell.”
And just like that… more for me. 😁
The Sunday Dinner Surprise
Four months ago, Kathy went on a sisters trip to Arizona.
That left me in charge of Sunday dinner for the whole crew.
Since Kathy wouldn’t be home to protest the aroma, I thought,
This is my moment.
Saturday, I pulled not one… but both frozen beauties out to thaw.
Sunday, I filled a massive pot with corned beef, carrots, and cabbage.

When the kids walked in, they weren’t quite sure what to think.
It does have a smell.
But then they tasted it.

Silence.
Then:
“Whoa.”
“This is amazing.”
“Why have we never had this before?!”
They all went back for seconds.
I made enough for leftovers all week… or so I thought.
By the end of the night, it was nearly gone.
I managed to salvage one modest plate for lunch the next day.

And honestly?
I was thrilled.
There’s something deeply satisfying about watching your kids fall in love with a meal from your childhood.
Here’s the Lesson
Corned beef might be seasonal.
But memories don’t have to be.
St. Patrick’s Day is just a few weeks away. When you see corned beef at the store, grab a couple extra and toss them in the freezer.
Future You will be very grateful.
