Black Bean and Ground Beef Chili

Serves 6


1 pound ground beef, browned
1/2 onion, diced
2 cloves garlic, minced
3 teaspoons olive oil
1 can black beans
1 can refried beans
1 (14 1/2-ounce) can tomato sauce
1 (14 1/2-ounce) can petite diced tomato
2 teaspoons cumin
1/4 teaspoon cayenne pepper (optional)
1-2 teaspoon chili powder
salt and pepper to taste

Brown ground beef and sautee onions and garlic in oil until onions turn clear.

Carefully add tomatoes, tomato sauce, black and refried beans and reduce the heat to medium low.

Add spices and stir to combine well.

Cover and allow to simmer at least 20 minutes, stirring occasionally.

Serve with cheese and/or sour cream if desired.
