Smooth Royal Icing


This pure white icing dries to a smooth, hard, matte finish and is often used by professional cookie decorators.

Serves 12


Ingredients:

  • 4 cups confectioners' sugar
  • 3 tablespoons meringue powder
  • 1/2 teaspoon vanilla extract
  • 1/2 cup to 3/4 cup warm water


Directions:

Using an electric mixer, beat confectioners' sugar and meringue powder until blended. Add water and beat on medium speed until glossy and stiff peaks form (about 5 minutes).

Icing should be easy to spread but not too thin.

Immediately after spreading cookie with icing, add sprinkles (if desired). It will harden quickly.

Store in an airtight container between uses, as icing will dry quickly when left out.

(makes about 3 cups of icing)
