Combine tapioca, milk, vanilla, and salt in a medium saucepan. Let sit for 5 minutes. Heat on medium-heat until steaming. Whisk eggs and sugar in a bowl. Whisking constantly, slowly add half of milk mixture. Return to pan and stir to combine. Cook over medium heat, stirring frequently until mixture starts to boil and thickens, about 7 minutes. Stir in coconut.
