My Favorite Greek Salad

Serves: 4

1 cucumber, peeled and diced
2 tomatoes, diced
1/2 red onion, thinly sliced
1/2 cup pitted Kalamata olives
1/2 cup crumbled feta cheese
3 tablespoons olive oil
2 tablespoons lemon juice
1 teaspoon dried oregano
1/8 teaspoon salt
1/8 teaspoon sugar


Combine vegetables and cheese in a large bowl. Whisk together remaining ingredients; toss gently with salad. Refrigerate until ready to serve.

Tip: Turn clay flower pots upside-down and line up along the edge of a garden path or flower bed...clever!
