Crunchy Strawberry Salad

1 (3-ounce) package ramen noodles
2 tablespoons butter
1 cup chopped walnuts
1/4 cup oil
2 tablespoons powdered calorie-free sweetener
2 tablespoons red wine vinegar
1/2 teaspoon soy sauce
8 cups romaine lettuce, torn
1/2 cup green onions, chopped
2 cups strawberries, hulled and sliced


Discard seasoning packet from ramen noodles or save for another use. Break noodles into small pieces. Heat butter in a large skillet over medium heat. Add noodles and walnuts. Sauté until golden, about 8 to 10 minutes; cool. For dressing, combine oil, sweetener, vinegar and soy sauce in an airtight container; shake well. Just before serving, combine lettuce, onions, strawberries and noodle mixture in a large bowl. Drizzle with dressing and toss gently.
