Vegan Oatmeal Cookies

3/4 cup old fashioned oats
3/4 cup almond meal (ground almonds)
1/4 cup oat flour (ground oats)
1/2 cup whole wheat flour
1/2 cup shredded coconut
1 teaspoon cinnamon
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1/4 cup raisins
1/2 cup chopped dates
1/2 cup agave
1/3 cup coconut oil
1 teaspoon vanilla extract


Combine all dry ingredients together. Add in agave, coconut oil, and vanilla. Mix until smooth. This dough is thick and should not stick to your hands. Bake at 350° for 10-12 minutes or until done. Cookies are done when they are beginning to turn golden on top but are still soft when touched.
