Red, White, and Green Bean Soup

1 large onion chopped (1 1/2 cups)
1 pound tofu cut in 1/2 inch cubes
8 ounces fresh mushrooms chopped
2 teaspoons olive oil
1 tablespoon soy sauce
6 cups boiling water
4 cups fresh chopped green beans in 1 inch pieces
1 cup uncooked elbow macaroni
1 (14 1/2-ounce) can diced tomatoes with chilies
1 (15-ounce) can tomato sauce
1 cup chopped fresh parsley
1 tablespoon paprika
1/2 teaspoon salt


In a large soup pot, sauté the onion, tofu, and mushrooms in the olive oil and soy sauce. Stir several times until the onions and tofu are browned.

Add the boiling water and green beans to the soup pot, and cook for 5 minutes.

Add the macaroni to the soup pot, and cook for 10 more minutes.

Simmer for 5 more minutes, and serve.
