In a large pot, bring the water to a boil with the bay leaf, lentils, garlic, and zucchini. Partially cover and simmer for 30 minutes.
Add the cabbage, carrots, tomatoes, parsley, and herbs to the soup. Return to a boil and simmer for 20 minutes.
Add the salt and keep the soup covered until ready to serve.
