_ 10-ounce package spinach chopped
_ 6 1/2-ounce can crab meat white, drained
_ ounces swiss cheese shredded (about 1 cup)
___ cup mayonnaise
___ teaspoon black pepper
_ english muffins sourdough, cut in half
Preheat oven to 425°.
Cook spinach according to package directions; drain well (MW). Measure 1/2 cup; reserve remaining spinach for another use.
In a medium bowl, mix crab meat, cheese, 1/2 cup spinach, mayonnaise and pepper until blended.
Lightly toast English muffins if desired. Spread 1/3 cup of the crab mixture on each English muffin half. Place halves on a baking sheet.
Bake for 8 to 9 minutes or until cheese is melted and edges begin to brown. Serve immediately.
Serve with melon wedges and strawberries.
