Sour Cream and Cheddar Baked Potatoes

6 to 8 medium russet potatoes
1/2 cup vegetable oil
2 cups sour cream
salt to taste
1/2 cup butter or margarine, softened
1 cup grated Cheddar cheese
1 tablespoon chopped chives or green onion


Preheat oven to 400 degrees.

Poke potatoes with fork 3 to 4 times. Rub a small amount of vegetable oil over potato skins. Lay potatoes on a large baking sheet. Lightly sprinkle salt over potatoes. Bake 55–60 minutes, or until potatoes are tender.

Mix sour cream, butter, and cheese together until smooth. Fold in chives or green onion. Spoon over hot baked potatoes. Makes 6–8 servings.
