Skillet Fried Ranch Potatoes

2 tablespoons olive oil
4 cups medium red potatoes, diced
1/4 cup chopped onion
1 envelope ranch salad dressing mix


Heat oil in a large frying pan over medium-high heat. Slowly add potatoes and onion to hot oil. Cover pan with a lid. Turn diced potatoes with a spatula every 2–3 minutes, or until golden brown. After 6 minutes of cooking, stir dry ranch dip mix into potatoes. Cook an additional 6–8 minutes, turning potatoes every 2–3 minutes. Makes 4–6 servings.
