This versatile piece of equipment serves many purposes, but for hot hors d'oeuvres, use it strictly as a warming device. Make sure the food is at serving temperature before adding it to the pan. Pour boiling water into the water-bath pan and set the pan with the food over it. Adjust the flame to keep the water simmering. The water controls the temperature of the food so it will neither burn nor become cold. It usually takes quite a while for the water to evaporate, but you should check it from time to time and add more if needed.
