1. Preheat the grill to medium-high.
2. Cut the bread sharply on the diagonal into 3/4-inch-thick slices.
3. Cream the butter with a whisk in a mixing bowl. Add the garlic, cilantro, salt, and pepper.
4. When ready to cook, generously brush or spread the bread slices on both sides with the cilantro butter. Arrange the bread slices on the hot grate and grill, turning with tongs as needed, until nicely browned, 2 to 4 minutes per side. Don’t take your eyes off the grill for a second grilled bread burns very easily. Transfer to a bread basket and serve immediately.
