Sauté the chicken and then cut it into small cubes. Cook the bacon, then let it cool. Once it is cool, break it into small pieces.
Tear the lettuce into bite sized pieces. Dice the tomatoes, olives, and celery. Peel and slice the cucumbers. Place all ingredients in a large bowl and toss well.
Top with your favorite gluten-free dressing. (My children prefer ranch, but my husband says raspberry vinaigrette and Italian are also very good with this salad.)
