European explorers discovered the pumpkin, a type of squash, when they landed on the New World to conquer the Incas and Aztecs. Northern Native Americans cooked whole pumpkins in fire ashes. They then scooped out the fleshy orange meat, poured maple syrup over it, and just like that, supper was served!
Today, pumpkins are most widely used as jack-o-lanterns at Halloween and to make pumpkin pie during the Thanksgiving and Christmas seasons. It is great in bread, too, or to just eat like squash. Pumpkins are loaded with Vitamin A, complex carbohydrates, and fiber, so which ever way you choose to eat them, you are bound to get a nutritional boost.
