Snow Hill Inn’s Crab Quiche

1 sheet puff pastry
5 eggs, beaten
1 cup heavy cream
8 ounces sharp cheddar cheese, grated
6 ounces Swiss cheese, grated
1/2 teaspoon seafood seasoning
1 teaspoon chopped cilantro
3/4 pound crabmeat


Fit puff pastry into a large pie pan. Combine eggs, cream, and cheeses. Add seasonings and stir in crabmeat. Pour into pastry shell and bake at 375° for 45 minutes, or until a knife inserted in center comes out clean.
