When dicing up the carrots, red pepper, and celery, chop up extra to add to your tossed salad for Thursday. Store in an air tight container big enough to add vegetables throughout the week. Trim enough broccoli flowerettes for tonight's and tomorrow's dinner. Grate enough Parmesan cheese for this recipe and also for the stuffed pasta shells on Thursday. When cooking pasta, save your hot water. Then add jumbo shells for Thursday's dinner. Store shells in air tight container in the refrigerator.
