Russian Fish Soup

Serves: 6

2 pounds fish steaks, cut into 1 inch chunks
4 cups water
1 cup rice
3 medium potatoes, diced
3 carrots, sliced thin
1 medium onion, diced
salt and pepper


Set a 12-inch Dutch oven on the camp stove and boil water, lightly salted. Add the rice and let it cook for about 10 minutes before you add the potatoes, carrots, and fish chunks. Simmer until fish and potatoes are done. Add the diced onion and season with salt and coarse ground black pepper just before serving. A great variation is to use smoked salmon and serve with crusty sourdough bread!
