Greco's Ham Hocks And Greens

4 smoked ham hocks
3 cups water
1 medium onion, diced
1 bunch collard greens
1 bunch mustard greens
1 bunch turnip greens
2 hard-boiled eggs, sliced


Place the ham hocks in a Deep 12-inch Dutch oven, along with the water, and simmer with 8-10 briquets underneath and 10-12 on the lid. Once you’ve started the hocks, wash the greens and tear them into pieces. Mix them up and place in the DO over top of the ham hocks. Season to taste with salt, pepper, and garlic powder. Simmer for about two hours or until the ham hocks break apart. Garnish with the slices of hard-boiled eggs, and serve with a splash of vinegar over the greens. For crisper greens, add before serving.
