Bavarian Meat Marinade

1 1/2 cups red wine vinegar
1 1/2 cups red wine
1 1/2 cups water
2 onions, sliced
2 carrots, sliced thin
2 ribs celery, sliced in 1/2-inch chunks
1 teaspoon salt
8 to 10 peppercorns
3 bay leaves
4 wholes cloves
8 juniper berries


Bring all the ingredients to a boil and simmer for 10-15 minutes. Cool and use as marinade for red meats including venison. For a smaller amount cut the recipe in half.
