vegetable oil (about 3 cups)
1/4 cup sugar
1 1/2 teaspoons cinnamon ground
1 can refrigerated biscuit (10 biscuits in a can)*
powdered sugar (optional)

Pour vegetable oil into a 2 1/2- to 3-quart heavy saucepan or deep-fat fryer to a depth of 1 inch. Over medium-high heat, heat to 375°.

Meanwhile, place sugar and cinnamon in a plastic bag and mix well.

Split each biscuit in half (you will have 20 rounds). With a finger, poke a hole in center of each. Fry a few at a time, turning once, until golden brown (watch carefully). Remove with a slotted spoon. Drain on paper towels. Shake warm donuts in sugar-cinnamon mixture or roll in powdered sugar.

Serve immediately.
