Raw Sugar Banana Nut Bread

1/3 cup butter or margarine
2/3 cup sugar raw
1 3/4 cups unbleached flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 cup banana mashed ripe
1/2 cup walnuts chopped
Glaze (optional)

2/3 cup powdered sugar
2 tablespoons orange juice concentrate
1 teaspoon orange rind grated


Heat oven to 350°. Grease a 9 1/2 x 5 1/2 x 2 3/4 -inch loaf pan. Cream butter or margarine and sugar until light and fluffy. Sift flour, baking powder, baking soda, and salt together. Add flour mixture alternately with mashed banana to creamed mixture, a small amount at a time, beating after each addition until smooth. Stir in walnuts. Turn into prepared loaf pan and bake 45 to 50 minutes. Remove bread to cooling rack to cool. Prepare the following glaze.

*Blend ingredients together until consistency to drizzle over loaf while still slightly warm.
