Parmesan Zucchini

Serves: 4

1 onion thinly sliced
1/4 cup butter or margarine
4 to 6 zucchini medium, cut in 1/4 -inch rounds
1/4 teaspoon salt or to taste
Pepper to taste
1/2 cup Parmesan cheese grated


Sauté onion in butter or margarine until soft. Add zucchini, salt and pepper. Cook, tossing lightly for about 5 minutes. Add cheese just before serving and toss to coat well.
