Henny Penny Sandwich Spread

Serves: 2

1 (5-ounce) can chunk breast of chicken
2 tablespoons almonds finely chopped
1 tablespoon mayonnaise
1/4 teaspoon curry powder
1 to 2 tablespoon raisins if you wish
4 slices bread of your choice
Additional mayonnaise
Lettuce leaves or alfalfa sprouts, if you wish


1. Place chicken spread, almonds, 1 tablespoon mayonnaise and curry powder in a small bowl. Stir until blended. Stir in raisins if you wish.

2. Spread bread with a small amount of mayonnaise. Spread chicken filling on two slices of the bread. Top with a leaf of lettuce or alfalfa sprouts if you wish. Cover each with a slice of bread. Cut in half before serving.
