Ham-potato Salad

Serves: 6

2 cups russet potatoes cooked, cubed
2 cups ham diced
1/2 cup celery coarsely chopped
1/2 cup onion coarsely chopped
2 eggs hard-cooked, coarsely chopped
1/4 cup sweet pickle chopped
1 tablespoon pimiento chopped
1 teaspoon salt
black pepper
3/4 to 1 cups mayonnaise
1 teaspoon mustard prepared


In a large bowl, combine potatoes, ham, celery, onion, eggs, pickles, pimiento, salt and pepper.

In a small bowl, combine mayonnaise and mustard. Gently stir into potato mixture to coat all ingredients, being careful not to mash or break up potatoes. Serve immediately or cover and chill.
