In a small mixer bowl at high speed, beat 1 egg white until stiff. In a second small mixer bowl at low speed, beat 2 cups sifted powdered sugar and 1/2 cup softened butter until smooth and fluffy. At medium speed, beat in 1 egg yolk and 1 teaspoon vanilla extract. Fold in beaten egg white. Spoon into a small candy or dessert dish. Wrap in plastic wrap and refrigerate for at least 2 hours or until chilled. Serve with Bourbon Pecan Cake (see above). Chocolate Walnut Fruitcake or plum pudding. Makes about 1 1/2 cups.
