2 1/2 cups unbleached flour
1 cup graham flour or whole wheat flour
1/2 cup yellow cornmeal
1/2 cup lard
2 cups water boiling
2 cups flour unbleached for rolling out


Combine dry ingredients cut in lard. Add water and stir until very well mixed. (Mixture will seem slightly sticky, but will hold together well.) Roll out a walnut-size portion very thin on well floured pastry cloth, to about dinner plate size. Bake on electric fry pan or lefse iron to set. Transfer to cookie sheet and finish baking in 325° oven to crisp. Repeat process until dough is used. Cool on cake rack before storing in airtight containers. Finished flatbrød will be very crisp and light golden brown.

Note: The flatbrød can be baked completely in a 375° oven for about 5 to 7 minutes but it does have a tendency to curl around the edges. Turn once during baking.
