Chicken Rice Salad

2 cups chicken breasts diced cooked
1 1/2 cups white rice cooked long grain white
1 cucumber small, quartered and sliced
1 (6-ounce) jar marinated artichoke heart drained and cut if large
12 olives pitted ripe, halved
1/2 cup petite peas thawed and drained
dash salt
dash black pepper
1/2 to 1 cup italian herb dressing purchased
Romaine lettuce leaves
cherry tomatoes
radish Sliced


In a large bowl, combine chicken, rice, cucumber, artichokes, olives, peas, salt and pepper. Stir in 1/2 cup of the dressing.

Line individual salad plates with romaine lettuce. Arrange chicken salad on romaine. Garnish with cherry tomatoes and radishes. Pass additional dressing if desired.
