Brown Rice Pilaff

1 cup brown rice
1/4 cup butter
1 (10-ounce) can beef broth
2/3 cup water
1 (4-ounce) can mushrooms button, small, drained (optional)


Wash rice drain. Melt butter (or margarine) in heavy skillet and brown rice, stirring constantly. In 1 1/2-quart casserole combine browned rice with broth (or consomme) and water. Cover bake at 375 degrees F. for 1 3/4 hours. Stir in drained mushrooms bake, covered, 15 minutes longer.
