Breakfast Cookies

1/3 cup whole bran cereal
1/4 cup orange juice concentrate
1 cup flour or whole wheat flour
1 cup oats
1/3 cup dry milk powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup butter or margarine, softened
1/4 cup brown sugar packed
1 egg large
1/4 cup honey
1 1/2 teaspoons vanilla extract
1 1/2 teaspoons orange rinds grated
1/2 teaspoon lemon peel grated
1 cup pecans finely chopped
1/2 cup raisins
1/2 cup dates finely chopped


Preheat oven to 375°. Grease baking sheets. In a small bowl, stir bran cereal and orange juice set aside for 5 minutes.

In a medium bowl, combine flour, oats, milk powder, baking powder, baking soda and salt set aside.

In a large mixer bowl at medium speed, beat butter or margarine and brown sugar until light and fluffy. Beat in egg until well blended. Add bran cereal mixture, honey, vanilla, orange and lemon rind beat until blended. At low speed, beat in flour mixture until moistened. Stir in pecans, raisins and dates. Drop by tablespoonfuls onto baking sheets, about 1 1/2 inches apart. Bake for 10 to 12 minutes or until medium brown. Cool cookies on wire racks.

Store in an airtight container.
