Broccoli Slaw

Serves: 4

4 broccoli stems, peeled and thinly sliced with a mandoline
2 nectarines with skin, diced
1 celery heart, or 3 to 4 stalks celelry with leaves, chopped
1 cup thinly sliced red cabbage
2 oranges juiced
30 fresh mint leaves
1/2 cup almonds with skins, toasted and coarsely chopped


Put the broccoli, nectarines, celery, cabbage, orange juice, and mint (see note) in a large bowl and toss until well combined. To serve immediately, spoon into salad bowls and sprinkle with the almonds. Stored in a sealed container in the refrigerator, Broccoli Slaw, without the mint and almonds, will keep for 2 days. Add the mint and sprinkle with the almonds just before serving.

Note: Because the acid in the orange juice will quickly turn the mint brown, stir in the mint just before serving.
