Santa Fe Rub

Serves: 4

About 3 tablespoons rub


   4 boneless skinless chicken breast halves
   
   1 tablespoon chili powder
   1 tablespoon vegetable oil
   1 teaspoon ground cumin
   1/4 teaspoon salt
   1/4 teaspoon ground (chipotle) green chili peppers or red pepper (cayenne)
   1 clove garlic, finely chopped
   2 tablespoons vegetable oil


1. Flatten chicken breasts to 1/4-inch thick between plastic wrap or waxed paper (see ALL ABOUT CHICKEN, 04-How to Flatten Chicken Breasts).

2. Mix all rub ingredients except 2 tablespoons oil. Rub both sides of chicken with rub.

3. Heat remaining oil in 12-inch nonstick skillet over medium heat. Cook chicken in oil 8 to 10 minutes; turning chicken once, or until chicken is no longer pink in center.
